Four-Ways Roasted Maitake

Something about roasted mushrooms is just wholesome and satisfying. One of our favorite mushrooms to roast is the mighty Maitake, so why not try it a few ways? Use these savory bites on salads, wraps, pizza, sandwiches, omelets, or simply by themselves!

Ingredients

  • 16 ounces RI Mushroom Co. Maitake mushrooms, divided by 4

    Garlic & Herb

  • 1 tablespoon extra virgin olive oil

  • 1 clove garlic, minced or grated

  • 1 teaspoon fresh thyme, chopped

  • Salt and pepper, to taste

    Smoky

  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon smoked paprika

  • 1 clove garlic, minced or grated

  • Salt and pepper, to taste

    Cumin & Lemon

  • 1 tablespoon extra virgin olive oil

  • ½ teaspoon lemon zest (about ½ lemon)

  • ½ teaspoon cumin

  • ¾ teaspoon lemon juice

  • Salt and pepper, to taste

    Maple Sriracha

  • 2 teaspoons extra virgin olive oil

  • 2 teaspoons sriracha (or other hot sauce)

  • 1 teaspoon maple syrup

  • 1 teaspoon white wine

  • 1 clove garlic, minced or grated

  • Salt and pepper, to taste

Directions

  1. Preheat oven to 400 °F.

  2. In four separate medium bowls, add all the listed ingredients per flavor. Stir to combine. Be conservative with the salt because more can always be added later. See chef’s notes if you want to make just one flavor.

  3. Divide the RI Mushroom Co. Maitake mushrooms four ways. Slice or break into large pieces and add separated mushrooms to each dish. Toss flavorings and arrange in a single layer on a parchment-lined sheet tray, keeping the flavors slightly separated so they don’t mix.

  4. Roast the mushrooms in the preheated oven until crispy and cooked, 15-25 minutes, depending on preference for crispiness. Remove from oven and season with more salt and pepper, if necessary. Enjoy!

Chef’s Notes:

  • These flavors can easily scale to larger amounts of roasted mushrooms or a single chosen flavor. Multiply each ingredient per flavor for every 4 ounces of mushrooms and follow the recipe the same way. 8 oz. mushrooms = 2x ; 32 oz. mushrooms = 8x
