WHITE BEECH (Hypsizygus tessellatus)
White Beech mushrooms are thin-stemmed and white-capped gilled mushrooms that grow in clumps. Originally native to East Asia, these mushrooms are commonly found on Beech trees, which is how they got their name.
Brown Beech and White Beech mushroom are derived from the same fungus, but white are commonly preferred over brown for their lighter flavor and slight sweetness when cooked. Try them both and pick your favorite.
